Baby greens, tomato, buckwheat noodles, garlic, salt, pepper, olive oil. A simple dinner recipe I’ve learned from a French pilgrim. Soba, she said, as she handed me a small bundle of her noodles. It was such a small portion, and she hated using the light gold olive oil from the kitchen — she doesn’t touch such light colors; they’re not real oil, she said — but we somehow made a bowl for three. And since then, I’ve been enjoying this simple recipe. Simple, but so very savory, delightful, and functional. Bon appétit!
